Pear and Cranberry Coffee Cake

Serving Size:
cranberries 12 oz.
canned pears, puréed with blender 1 can
butter, melted 1 Tbs.
sugar 1 cup
Papetti's® Easy Eggs® Liquid Egg Whites 3 ½ oz
canola oil 1 Tbs.
cake flour 2 1/4 cups
baking powder 1 tsp.
baking soda 1 tsp.
salt 1/2 tsp.
reduced fat sour cream 1 cup


  1. Purée pears and add to melted butter in stainless bowl.
  2. Add sugar, eggs, and oil and mix well.
  3. Sift flour with baking powder and soda.
  4. Add flour alternately with sour cream to bowl and add cranberries. Mix well.
  5. Spray 9"x12" pan with non-stick spray, pour in batter and bake at 350°F for 30-40 minutes until firm.


  • Serve with: reduced fat vanilla yogurt or ice cream
  • Garnish with: sliced fresh pears
  • Daypart suggestion: breakfast or lunch
