Potato Crusted Chipotle Scallops

Serving Size:
Potato Ingredients:
sea scallops, 5 per serving 3-4 oz.
flour 1/2 cup
Simply Potatoes® Shredded Hash Browns 2 cups
Papetti's® Better'n Eggs® Liquid Eggs 1/2 cup
salt and pepper to taste
canola oil 2 Tbs.

Chipotle Dipping Sauce Ingredients:
reduced fat mayonnaise 2 Tbs.
chipotle pepper sauce 1 Tbs.


  1. Dredge scallops in flour.
  2. Add egg to potatoes and mix well. Adjust seasoning.
  3. Wrap each scallop with potato mixture and place on 375°F grill with canola oil. Grill until potato is golden brown. Turn and repeat on all sides.
  4. Dipping Sauce: combine mayonnaise and chipotle sauce and mix well.
  5. Serve with chipotle sauce on the side.


  • Serve with: wedge salad with bleu cheese vinaigrette
  • Garnish with: chopped scallions or chives
  • Daypart suggestion: lunch, dinner or as an appetizer
