Smoked Ham, Asparagus & Potato Frittata

Serving Size: 8 oz.
Papettiā€™s® Easy Eggs® Liquid Eggs 32 oz.
Heavy Whipping Cream 36%* 2 oz.
Swiss Cheese, shredded 16 oz.
Smoked Ham, medium dice 12 oz.
Asparagus Tips, blanched 8 oz.
Simply Potatoes® Diced Potatoes 24 oz.
Chives, snipped 1 T.
Salt and Cracked Black Pepper to taste
Melted Butter or Alternative 6 oz.


  1. In a mixing bowl, combine the eggs, cream, chives and 10 ounces of the Swiss cheese. Reserve.
  2. In a preheated sauté pan, pour in the melted butter and add the potatoes. Season to taste with salt and cracked black pepper. Sauté until golden brown. Add the ham and cook for an additional minute.
  3. Add the egg mixture and the asparagus to the potatoes and ham and fold over itself until almost set.
  4. Remove from heat and sprinkle the remaining Swiss cheese over the top and place under a salamander or broiler and cook until the cheese has melted to a golden brown and eggs have set.
  5. Remove from the pan and place on a heated serving tray. Cut into 12 pieces and serve.


  • *Heavy Whipping Cream 35% can be replaced with Half & Half for a lower fat alternative.
