Crunchy Caramelized Banana Stuffed French Toast

Custard Ingredients:
Amount
Papetti's® Easy Eggs® Liquid Whole Eggs 32 oz.
Heavy Whipping Cream 36%* 4 oz.
Sugar, super fine 2 oz.
Cinnamon 1 T.
Nutmeg, fresh ground 1/2 tsp.

Filling Ingredients:
 
Strawberry Cream Cheese, whipped 24 oz.
Bananas, peeled, sliced lengthwise and cut in half 12 each
Brown Sugar 4 oz.
Butter or Alternative 4 oz.

Coating Ingredients:
 
Corn Flakes, crushed 16 oz.
Papetti's® Table Ready® French Toast Slices 24 pieces
Melted Butter or Alternative as needed

Directions

  1. In a mixing bowl combine eggs, cream, sugar, cinnamon and nutmeg. Reserve.
  2. In a sauté pan, melt the butter and add the sugar. Cook until the sugar is dissolved and bubbling. Add the bananas and cook for 2 minutes. Cool.
  3. Spread one side of the French Toast with 2 ounces of the strawberry cream cheese and place 4 slices of the caramelized bananas on top.
  4. Top with the second piece of French Toast.
  5. Dip the sandwich in the custard and then into the corn flakes.
  6. Place on a buttered preheated grill. Grill until golden brown, turn over and repeat.

Tip:

  • *Heavy Whipping Cream 36% can be replaced with Half & Half for a lower fat alternative.
