Sun-Dried Cranberry and Walnut French Toast

Ingredients:
Amount
Papetti's® Easy Eggs® Liquid Egg Whites 32 oz.
Skim Milk 8 oz.
Vanilla 2 tsp.
Cinnamon 1 T.
Nutmeg, fresh ground 1/2 tsp.
Cream Cheese, reduced fat 24 oz.
Sun-dried Cranberries 6 oz.
Walnuts, chopped 4 oz.
Powdered Sugar 2 oz.
Whole Wheat Bread, 1" thick sliced 24 each
Melted Butter or Alternative (divided) as needed

Directions

  1. Whip the cream cheese with the powdered sugar until light and fluffy. Fold in the cranberries and walnuts.
  2. In a separate bowl, combine eggs, skim milk, cinnamon, vanilla and nutmeg.
  3. Spread 3 ounces of the cream cheese mixture on 1 side of the bread and top with another piece of bread.
  4. Dip into the egg mixture and place on a buttered preheated grill. Grill until golden brown, turn over and repeat.
