California Scramble
Portions: 12 servings
Serving Size: 5.5 ounces
Papetti's® Better'n Eggs® Liquid Eggs 30 oz.
Skim Milk 1 oz
Cream Cheese, reduced fat, cut into small pieces 4 oz
Wild Mushrooms, assorted, rough chop 8 oz.
Sun-dried Tomatoes, reconstituted and julienned 3 oz.
Artichoke Bottoms, rough chop 4 oz.
Garlic, fresh, chopped 1 each
Green Onion, sliced 1/2 oz
Fresh Herbs, assorted, chopped 1 T.
Goat Cheese, reduced fat, crumbled 6 oz.
Salt and Pepper to taste
Olive Oil or Alternative 3 oz.


  1. In a mixing bowl, combine the eggs, skim milk, fresh herbs and cream cheese.
  2. Pour half of the olive oil on a preheated griddle and add the mushrooms and garlic. Cook until the mushrooms are golden brown. Add the artichokes, sun-dried tomatoes and green onions, and cook until heated thoroughly.
  3. Add the additional olive oil and the egg mixture to the grill and fold over itself until set. Season to taste with salt and pepper.
  4. Transfer to a serving tray or hotel pan and garnish with the crumbled goat cheese.
