German Potato Salad

Serving Size: 2.5 ounces
Ingredients:
Amount
Simply Potatoes® Sliced Potatoes 10 lbs
Onions, medium, sliced thin 15 each
Bacon 40 slices
Sugar 1/3 cup
Cider Vinegar 2 1/2 cups
Water 7 1/2 cups
Flour 1/3 cup
Dry Mustard 5 t
Prepared Mustard 5 T
Evaporated Milk 2 1/2 cups
Celery Salt 1/2 t
Salt and Pepper to taste

Directions

  1. Arrange potatoes and onion in alternate layers in an ungreased 9x13 casserole dish.
  2. Sprinkle the alternate layers with salt and pepper.
  3. Dice bacon and fry until crisp. Drain, keeping the bacon grease.
  4. To the bacon grease add sugar, cider vinegar, and 6 1/4 cups water.
  5. Add remaining water to flour and stir into a paste.
  6. Mix both mustards and blend in evaporated milk.
  7. Add the mustards and milk to the vinegar mixture.
  8. Cook over low heat, stirring constantly until smooth and thick.
  9. While still hot, pour dressing over potatoes until they are well coated.
  10. Sprinkle with bacon. Serve either hot or cold.
