Greek Potatoes

Serving Size: 2.5 ounces
Simply Potatoes® Diced Potatoes 10 lbs
Lemon Juice 1 cup
Vegetable Oil 1 1/4 cups
Olive Oil 1/4
Salt 2 T
Black Pepper 1 1/2 t
Oregano 1 1/2 t
Garlic, puréed 6 cloves
Water 5 cups
Feta Cheese 2 cups
Fresh Parsley to taste


  1. Preheat oven to 475°F.
  2. Place potatoes on an ungreased full-sheet baking or roasting pan.
  3. In medium bowl, add lemon juice, oils, spices and garlic. Mix well. Pour over potatoes. Toss together.
  4. Pour water evenly over potatoes.
  5. Bake uncovered for about 45 minutes. Stir every 20 minutes. Add water if necessary to prevent sticking. Be careful not to burn the potatoes during the last 15 minutes. During the last 15 to 20 minutes allow water to evaporate until only oil is left.
  6. Garnish with fresh parsley and feta cheese. Serve hot.
