Mashed Potatoes with Spinach and Cheese
Portions: 19 servings
Serving Size: 5 ounces
Simply Potatoes® Mashed Potatoes 6 lbs
Fresh Baby Spinach 20 oz
Butter 1/2 cup
Gruyere Cheese, shredded 4 cups
Salt and Pepper to taste


  1. Bring a large pot of salted water to a boil. Add baby spinach and cook for 1 minute. Drain well. Squeeze out as much water as possible from spinach. Set spinach aside.
  2. In large pot, fill half way with water and put mashed potatoes in water. Bring to a boil and heat potatoes for 15-20 minutes in boiling water.
  3. With tongs, pull out bag. Carefully empty bag of potatoes into a large bowl.
  4. Add the remaining ingredients to the potatoes. Mix until the butter and cheese has melted. Season to taste with salt and pepper. Serve hot.
