Potato Chive Soufflé
Portions: 8-10 servings
Serving Size: 5 ounces
Simply Potatoes® Mashed Potatoes 3 lb.
Cream Cheese 8 oz.
Sour Cream 8 oz.
Butter, melted 1/4 cup
Papetti’s® Easy Eggs® Liquid Whole Eggs 1/4 cup
Salt 1 t
Black Pepper 1/2 t
Fresh Chives, chopped 1/4 cup


  1. Preheat oven to 350°F. Add mashed potatoes and the rest of the ingredients in a large bowl, reserving some chives for garnish. Mix until all ingredients are thoroughly blended.
  2. Place mixture in a well-greased 2-quart baking dish and sprinkle with remaining chives. Or bake in individual dishes for 30-40 minutes or until lightly golden.
  3. Bake in oven for an hour or until the top turns pale golden. Garnish with chives.
