Ham, Egg and Potato Pancakes
Portions: 1 serving
Serving Size: 3 pancakes
Simply Potatoes® Shredded Hash Browns 12 oz.
Papetti's® Easy Eggs® Liquid Whole Eggs 1/4 cup
baked ham, diced 2 oz.
Parmesan cheese, shredded 1 Tbs.
salt and pepper to taste
matzo meal 3 Tbs.


  1. In a mixing bowl, combine hash browns, eggs, ham, cheese, salt and pepper. Mix well.
  2. Add matzo meal to absorb excess liquid.
  3. Form into 3 pancakes and place on 350° F flattop grill.
  4. Cook 4-5 minutes on each side until golden brown. Serve immediately.


-Serve with applesauce compote

-Serve with scrambled eggs

-Daypart suggestion: appetizer, or breakfast through late night
