Serving Size:
Papetti's® Easy Eggs® Liquid Whole Eggs 1/2 cup
olive oil 2 Tbs.
chicken, diced 2 oz.
tri-color peppers (green/red/yellow), diced 1 oz.
jalapeno peppers, diced 1/2 oz.
tomato, diced 1 oz.
black beans 1 oz.
Monterey Jack cheese 1 slice
sour cream 2 oz.


1.In hot saute pan, heat oil.

2. Add chicken, tri-color peppers, jalapenos, tomatoes and black beans. Cook for 3 minutes.

3. Add eggs. Cook for another 3 minutes.

4. When omelet is cooked, turn over. Cook until lightly browned.

5. Top with cheese slice. Fold onto plate.

6. Garnish with sour cream.
