Egg White Avocado Salad

Papetti's® Table Ready® Egg White Patty, diced 1
celery root, julienned 2 oz.
light mayonnaise 1 Tbs.
Dijon mustard 1/4 Tbs.
cayenne pepper 1/2 tsp.
tarragon, minced 1 tsp.
apple, diced 2 oz.
avocado, diced 1/2 small
mixed greens 8 oz.


1. Preheat oven to 450° F.

2. Place celery root on parchment-covered hotel pan. Place in oven. Roast 3-5 minutes, or until soft.

3. In small bowl, mix mayonnaise, mustard, cayenne and tarragon. Set dressing aside.

4. In large bowl, mix apple, avocado, celery root and diced egg white patty.

5. Stir dressing into egg and avocado mixture.

6. Arrange greens on plate. Top with egg salad and serve.
