Papetti's® Table Ready® Egg White Patty, diced 1
olive or canola oil 2 Tbs.
sun-dried tomatoes, chopped 1 Tbs.
corn tortilla 1
Cheddar cheese, shredded, divided 1 1/2 Tbs.
black beans, heated 3 Tbs.
salsa or pico de gallo 3 Tbs.


1. Preheat oven to 350° F.

2. Heat oil in saute pan over medium-high heat.

3. Add tortilla to hot oil. Fry until crisp, and remove to paper towel or cooling rack.

4. To prepare, place tortilla on sheet pan.

5. Sprinkle ½ Tbs. cheese on tortilla. Add egg white patty. Sprinkle remaining cheese over patty.

6. Place in oven. Bake 5 minutes, or until egg is heated through and cheese is melted.

7. Remove from oven and place on plate.

8. Top with black beans and salsa. Serve hot.
