Serving Size: 1 omelet
Papetti's® Easy Eggs® Liquid Egg Whites 6 oz.
olive or canola oil 1 Tbs.
salt 1/8 tsp.
fresh ground black pepper 1/8 tsp.
Asiago cheese, grated 3 Tbs.
roasted red pepper, sliced 1 oz.
spinach, wilted 2 oz.
fennel sausage, cooked and crumbled 2 oz.
pesto 1 1/2 tsp.
fresh tomato, diced 1 oz.


1. Heat oil in nonstick saute pan over medium heat.

2. In small bowl, combine liquid egg whites, salt and pepper.

3. In medium bowl, combine cheese, red pepper, wilted spinach, sausage and pesto. Set aside.

4. Add egg mixture to hot oil in saute pan.

5. Cook, allowing uncooked portions to flow toward edges, until just about set.

6. Fill with cheese and sausage mixture. Fold omelet and cook until contents are heated and omelet is slightly browned.

7. Slide onto plate. Top with fresh diced tomatoes and serve hot.
