Asian-Style Potato Salad
Portions: 3 Servings
Serving Size:
Simply Potatoes® Diced Potatoes 16 oz.
pickled cilantro 1 oz.
red bell pepper, julienned 1 oz.
onion, thinly sliced 1 oz.
rice vinegar 3 Tbs.
soy sauce 1/8 cup
granulated sugar 1 1/2 Tbs.
fresh lime, juiced 1/2 lime
cashews, toasted 1 Tbs.


  1. Place potatoes in saucepan. Cover with cold water. Bring to boil.
  2. Cook potatoes until soft, about 5 minutes.
  3. Drain potatoes and cool to room temperature.
  4. In large bowl, combine potatoes, cilantro, red pepper and onion.
  5. In small bowl, mix rice vinegar, soy sauce, sugar and lime juice.
  6. Pour sauce over potato mixture. Toss mixture to coat. Serve topped with cashews.
