Greek Potato Salad

Potato Salad Ingredients:
Amount
Simply Potatoes® Red Skin Wedges, cooked 5 lbs.
red onion, sliced in rings 2.5 oz.
feta cheese, crumbled 3 oz.
kalamata olives, halved 3 oz.
fresh oregano, chopped 1 oz.
capers 1 oz.

Citrus Vinaigrette Ingredients:
 
lemon juice 2 Tbs.
lime juice 2 tsp.
Dijon mustard 1 tsp.
apple cider vinegar 3/4 tsp.
honey 1/4 tsp.
salt and pepper to taste
salad oil 1/2 cup

Directions

  1. To prepare vinaigrette, combine lemon juice, lime juice, mustard, apple cider vinegar, honey, salt and pepper in blender. Blend well.
  2. While blending, gradually add oil. Blen on high for 20 seconds, or until well mixed. Set aside.
  3. In large bowl, combine potatoes, onion, feta, olives, oregano and capers.
  4. Pour vinaigrette over salad and toss until poatoes are coated. Serve chilled.

Tip:

  • Use any Simply Potatoes® diced or red skin wedge variety in this recipe.
  • For another option, substitute citrus vinaigrette with tzatziki sauce.
