Smoky Potato Salad

Ingredients:

Simply Potatoes® Red Skin Diced Potatoes, cooked 5 lbs.
mayonnaise 1 1/2 cups
salt 1 tsp.
Dijon mustard 2 1/2 Tbs.
paprika 5 Tbs.
pepper 2 tsp.
red onion, diced 4 oz.
Fresh Chives, chopped 0.5 oz.
bacon lardons, diced, cooked, drained 4 oz.

Directions

  1. In a small bowl, combine mayonnaise, salt, mustard, paprika and pepper. Mix well.
  2. In large bowl, combine potatoes, onion, chives and bacon.
  3. Add mayonnaise mixture to potatoes. Toss until all potatoes are well covered. Serve chilled.

Tip:

  • Use any Simply Potatoes® diced or red skin wedge variety in this recipe.
  • For another option, substitute bacon with prosciutto.
