Truffled Potato Gratin
Truffled Potato Gratin
Portions: 12 servings
Serving Size:
Simply Potatoes® Sliced Potatoes 3 lbs.
cream 2 2/3 cups
white truffle oil 1 1/4 Tbs.
garlic, minced 0.5 oz.
salt and pepper to taste
oil 2 Tbs.
crimini mushrooms, chopped 17 oz.
shallots, diced 6 oz.
fresh thyme, chopped 0.3 oz.
cooking spray as needed
fresh chives, chopped 0.4 oz.


  1. Preheat oven to 400°F.
  2. In small pan, combine cream, truffle oil and garlic. Bring to simmer over medium heat.
  3. Season with salt and pepper. Remove from heat. Set aside.
  4. Heat oil in saute pan over medium heat.
  5. Add mushrooms, shallots and thyme. Saute until softened. Set aside.
  6. Coat small dish or cast-iron pan with cooking spray.
  7. Arrange layer of potatoes in bottom of pan.
  8. Add small amount of mushroom mixture over potatoes.
  9. Place another layer of potatoes over mushrooms.
  10. Repeat layering process until pan is almost filled. Top final layer with remaining mushrooms.
  11. Pour reserved cream mixture over layered potatoes.
  12. Sprinkle with chopped chives. Place pan in hot oven.
  13. Bake 45 minutes, or until bubbly and golden brown. Remove from oven.
  14. Divide into 12 sections. Serve hot.


  • Use any Simply Potatoes® sliced variety in this recipe.
