Sweet Potato Pancakes

Serving Size: 1 pancake
Simply Potatoes® Sweet Potato Mashed 12 oz.
Papetti's® Easy Eggs® Liquid Whole Eggs 2/3 cups
maple syrup 1/2 cup
pumpkin pie spice 1/4 tsp.
buttermilk 3/4 cup
pancake mix 1 1/2 cups
maple syrup to taste
cinnamon butter to taste


  1. In small saucepan over low heat, reduce ½ cup maple syrup in half. Stir in pumpkin pie spice.
  2. In large bowl, combine sweet potatoes, eggs and buttermilk.
  3. Gently fold pancake mix into egg/potato mixture.
  4. Slowly stir in warm syrup.
  5. Let batter stand for at least 30 minutes in refrigerator.
  6. Pour 1 oz. batter onto nonstick pan or griddle. Cook until set.
  7. Serve with maple syrup and cinnamon butter.
