Egg-Stuffed Meatballs with Chipotle Tomato Sauce
Egg-Stuffed Meatballs with Chipotle Tomato Sauce
Portions: 4 servings
Serving Size: 2 meatballs
Ingredients:
Amount
Ground beef 1 lb.
Salt 1 teaspoon
Black pepper ¼ teaspoon
Hard Cooked Diced Eggs, small dice 2 oz.
Oil, vegetable 2 tablespoon
Diced tomatoes, canned 1 ½ cup
Chipotle in adobo, pureed 1 tablespo
Oregano, ground 1 teaspoon
Cumin, ground ½ teaspoon

Directions

  1. Mix ground beef with salt and pepper. Portion ground beef into 2 oz portions. Stuff with ¼ oz of diced hard cooked eggs.
  2. In a large non-stick skillet, heat oil over medium heat. Cook each meatball on both sides, for 3-5 minutes, until browned. Bake at 375ºF for 7-8 minutes.
  3. In a separate pot, add diced tomatoes, chipotle puree, oregano and cumin and simmer for 20 minutes.
  4. Remove meatballs from oven and serve with sauce.
