Crunchy Caramelized Banana Stuffed French Toast

Ingredient Amount
Custard  
M.G.Waldbaum's Easy Eggs® or Papetti's Table ReadyTM Liquid Eggs 32 oz
Heavy Whipping Cream 36%* 4 oz
Sugar, super fine 2 oz
Cinnamon 1 T
Nutmeg, fresh ground 1/2 tsp
Filling  
Strawberry Cream Cheese, whipped 24 oz
Bananas, peeled, sliced lengthways and cut in half 12 each
Brown Sugar 4 oz
Butter or Alternative 4 oz
Coating  
Corn Flakes, crushed 16 oz
Michael Foods French Toast 24 pieces
Melted Butter or Alternative as needed

*Heavy Whipping Cream 36% can be replaced with Half & Half for a lower fat alternative.

Directions
  1. In a mixing bowl combine eggs, cream, sugar, cinnamon and nutmeg. Reserve.
  2. In a sauté pan, melt the butter and add the sugar. Cook until the sugar is dissolved and bubbling. Add the bananas and cook for 2 minutes. Cool.
  3. Spread one side of the French Toast with 2 ounces of the strawberry cream cheese and place 4 slices of the caramelized bananas on top.
  4. Top with the second piece of French Toast.
  5. Dip the sandwich in the custard and then into the corn flakes.
  6. Place on a buttered preheated grill. Grill until golden brown, turn over and repeat.
