Sun-Dried Cranberry and Walnut French Toast

Ingredient Amount
M.G.Waldbaum's Simply UltraTM Eggs or Papetti's Better'N Eggs® Liquid Eggs 32 oz
Skim Milk 8 oz
Vanilla 2 tsp
Cinnamon 1 T
Nutmeg, fresh ground 1/2 tsp
Cream Cheese, reduced fat
Sun-dried Cranberries 6 oz
Walnuts, chopped 4 oz
Powdered Sugar 2 oz
Whole Wheat Bread, 1" thick sliced 24 each
Melted Butter or Alternative as needed

Directions
  1. Whip the cream cheese with the powdered sugar until light and fluffy. Fold in the cranberries and walnuts.
  2. In a separate bowl, combine eggs, skim milk, cinnamon, vanilla and nutmeg.
  3. Spread 3 ounces of the cream cheese mixture on 1 side of the bread and top with another piece of bread.
  4. Dip into the egg mixture and place on a buttered preheated grill. Grill until golden brown, turn over and repeat.
