New York Deli Breakfast Scramble

Portions: 12       Serving Size: 9 oz Pan
Ingredient Amount
Northern Star or Farm Fresh Diced Potatoes 32 oz (2 lb)
M.G.Waldbaum's Easy Eggs® or Papetti's Table ReadyTM Liquid Eggs 32 oz
Pastrami or Corned Beef, coarse dice 24 oz
Onions, medium dice 4 oz
Swiss Cheese, shredded 18 oz
Salt and Pepper to taste
Melted Butter or Alternative 4 oz

Directions
  1. Pour butter on a preheated grill. Add the onion and potatoes and cook until the potatoes are golden brown. Season to taste with salt and pepper.
  2. Add the pastrami and cook until heated through.
  3. Pour on eggs and fold over themselves until loosely set. Sprinkle with Swiss cheese and cook until set.
  4. Serve with grilled rye or dark bread.
