Philly Style Steak and Eggs

Portions: 12       Serving Size: 9 oz
Ingredient Amount
Northern Star or Farm Fresh Hash Brown Potatoes 24 oz (1 1/2 lb)
M.G.Waldbaum's Easy Eggs® or Papetti's Table ReadyTM Liquid Eggs 32 oz
Roast Beef or Rib Eye, thinly shaved 24 oz
Green Pepper, julienned 6 oz
Onion, julienned 6 oz
Mushrooms, sliced thin 6 oz
Salt and Pepper to taste
Melted Cheese Sauce 12 oz
Melted Butter or Alternative 4 oz

Directions
  1. Pour butter on a preheated grill. Add the potatoes and cook until slightly browned. Add the peppers, onions and mushrooms and cook until golden brown. Season to taste with salt and pepper.
  2. On a separate grill add the beef and grill until fully cooked. Combine the cooked beef and potato mixture.
  3. Pour on eggs and fold over themselves until set.
  4. Place in a serving dish or individual portions and drizzle the melted cheese on top.
