| Smoked Ham, medium dice |

| Asparagus Tips, blanched |
8 oz |
| Northern Star or Farm Fresh Diced Potatoes |

| Chives, snipped |
1 T |
| Salt and Cracked Black Pepper |
to taste |
| Melted Butter or Alternative |

*Heavy Whipping Cream 36% can be replaced with Half & Half for a lower fat alternative. |

Directions
|
- In a mixing bowl, combine the eggs, cream, chives and 10 ounces of the Swiss cheese. Reserve.
- In a preheated sauté pan, pour in the melted butter and add the potatoes. Season to taste with salt and cracked black pepper. Sauté until golden brown. Add the ham and cook for an additional minute.
- Add the egg mixture and the asparagus to the potatoes and ham and fold over itself until almost set.
- Remove from heat and sprinkle the remaining Swiss cheese over the top and place under a salamander or broiler and cook until the cheese has melted to a golden brown and eggs have set.
- Remove from the pan and place on a heated serving tray. Cut into 12 pieces and serve.
