Vermont Maple Scramble

M.G. Waldbaum's Easy Eggs® or Papetti's Table ReadyTM Liquid Eggs 72 oz 9.5 qt
Northern Star or Farm Fresh Diced Potatoes 8 oz 4 3/4 lb
Canadian Bacon, 1/2" cubes 18 oz 4 3/4 lb
Onions, medium dice 6 oz 1 1/2 lb
White Vermont Cheddar, shredded 6 oz 1 1/2 lb
Pure Maple Syrup 3 oz 1 1/2 cups
Salt and Pepper to taste to taste
Butter or Alternative 8 oz 32 oz

Directions
  1. Place half of the butter on a preheated grill. Cook the potatoes, Canadian bacon and onions until golden brown and tender. Season to taste with salt and pepper.
  2. Pour the remaining butter on the grill and add the eggs and maple syrup. Fold over themselves until almost set, sprinkle on the cheddar cheese and cook until set.
  3. Drizzle with additional maple syrup if desired.
