Andouille Creole Hash

Ingredient Amount
Northern Star or Farm Fresh Diced Potatoes 48 oz (3 lb)
Andouille Sausage, 1/8" half moon sliced 12 oz
Onion, fine dice 3 oz
Green Bell Pepper, fine dice 3 oz
Red Bell Pepper, fine dice 3 oz
Tomato Paste 2 T
Tomatoes, chopped and drained 4 oz
Granulated Garlic 1 T
Cayenne Pepper, ground 1 tsp
Salt and Pepper to taste
Melted Butter or Alternative 4 oz

Directions
  1. Pour butter on a preheated grill and grill andouille, red and green peppers and onion for 5 minutes.
  2. Add potatoes and remaining ingredients and grill until potatoes are fully cooked and golden brown.
  3. Season to taste with salt and pepper.
