Beef Miroton Mashed Potatoes

| Northern Star or Farm Fresh Mashed Potatoes |

| Leftover Boiled Beef |
3/4 lbs |
| Butter |
2 T |
| Onions, chopped |
2 each |
| Flour |
3 T |
| Dry White Wine |
1 cup |
| Light Beef Stock, heated |
1 cup |
| Fresh Parsley, chopped |
1 T |
| Butter, melted |
2 T |
| Salt and Pepper |
to taste |

| Directions |
- Preheat oven to 375ºF. Chop meat and set aside.
- Heat butter in frying pan over medium heat, add onions and cook 4 minutes.
- Add meat and season well. Cook 4 more minutes over medium heat.
- Add flour and mix well. Let cool for 1 minute.
- Add wine, beef stock and parsley and cook for 15 minutes over low heat.
- Transfer mixture to baking dish. Cover with mashed potatoes and sprinkle lightly with melted butter.
- Bake in oven for 20 minutes
