Beef Miroton Mashed Potatoes

Portions: 6       Serving Size: 5 oz
Ingredient Amount
Northern Star or Farm Fresh Mashed Potatoes 4 cups
Leftover Boiled Beef 3/4 lbs
Butter 2 T
Onions, chopped 2 each
Flour 3 T
Dry White Wine 1 cup
Light Beef Stock, heated 1 cup
Fresh Parsley, chopped 1 T
Butter, melted 2 T
Salt and Pepper to taste

Directions
  1. Preheat oven to 375ºF. Chop meat and set aside.
  2. Heat butter in frying pan over medium heat, add onions and cook 4 minutes.
  3. Add meat and season well. Cook 4 more minutes over medium heat.
  4. Add flour and mix well. Let cool for 1 minute.
  5. Add wine, beef stock and parsley and cook for 15 minutes over low heat.
  6. Transfer mixture to baking dish. Cover with mashed potatoes and sprinkle lightly with melted butter.
  7. Bake in oven for 20 minutes
