Beef and Tomato Topped with Mashed Potatoes

Ingredient Amount
Northern Star or Farm Fresh Mashed Potatoes 6 cups
Oil 2 T
Onion, finely chopped 2 each
Celery Stalk, chopped 2 each
Green Pepper, chopped 2 each
Garlic, smashed and chopped 6 cloves
Basil 2 t
Thyme 1 t
Lean Ground Beef 2 lbs
Dry Mustard 2 t
Diced Tomatoes, drained 56 oz
Tomato Sauce 1 1/2 cups
Melted Butter 2 T
Salt and Pepper to taste

Directions
  1. Preheat oven to 375ºF.
  2. Heat oil in frying pan over medium heat. Add onion, celery, pepper and garlic. Sauté for 3 minutes.
  3. Add herbs, beef, mustard, salt and pepper. Cook 8 minutes over medium heat.
  4. Incorporate tomatoes and tomato sauce and continue cooking for 3 minutes.
  5. Transfer mixture to baking dish and cover with mashed potatoes.
  6. Sprinkle lightly with melted butter. Bake for 20 minutes.
