Breakfast Potato Casserole

Ingredient Amount
Northern Star or Farm Fresh American Fries Sliced Potatoes 10 lbs
Breakfast sausage, cooked and crumbled 4 lbs
Cheddar cheese, shredded 3 cups
Onion, medium, sautéed 5 each
Eggs 3 dz
Milk 5 cups
Salt 2 T
Black pepper 2 t

Directions
  1. Preheat oven to 375ºF. Spray a full size baking dish with cooking spray.
  2. Evenly arrange half of the fries on the bottom of baking dish. Evenly sprinkle half of the sausage over the potatoes, then the onions and cheese. Repeat layers.
  3. Combine remaining ingredients. Pour over layers in pan.
  4. Bake 1 hour or until knife inserted near center comes out clean.
Optional:
Can substitute sausage with any favorite breakfast meat. Add green or red peppers or any of your favorite ingredients.
