Cajun Blackened Potatoes with Tasso Ham

Ingredient Amount
Northern Star or Farm Fresh Hash Brown Potatoes 40 oz (2 1/2 lb)
Tasso Ham, fine julienne 6 oz
Red Bell Pepper, small dice 2 oz
Chives, snipped 2 tsp
Cajun Spice Blend 2 T (divided)
Melted Butter or Alternative 4 oz

Directions
  1. In a mixing bowl, combine all of the ingredients except the butter and half of the Cajun spice blend.
  2. Butter 3" egg rings and place on a preheated 350ºF grill. Place a small amount of butter in each ring mold and place a 4 oz portion of the potato mixture in each. Sprinkle with the reserved Cajun spice blend.
  3. Grill until a dark golden brown. Remove the mold and brown on the other side.
