Cajun Blackened Potatoes with Tasso Ham

| Northern Star or Farm Fresh Hash Brown Potatoes |

| Tasso Ham, fine julienne |

| Red Bell Pepper, small dice |

| Chives, snipped |

| Cajun Spice Blend |
2 T (divided) |
| Melted Butter or Alternative |
4 oz |

| Directions |
- In a mixing bowl, combine all of the ingredients except the butter and half of the Cajun spice blend.
- Butter 3" egg rings and place on a preheated 350ºF grill. Place a small amount of butter in each ring mold and place a 4 oz portion of the potato mixture in each. Sprinkle with the reserved Cajun spice blend.
- Grill until a dark golden brown. Remove the mold and brown on the other side.
