German Potato Salad

| Onions, medium, sliced thin |

| Cider Vinegar |

| Water |
7 1/2 cups |
| Flour |
1/3 cup |
| Dry Mustard |

| Prepared Mustard |

| Evaporated Milk |
2 1/2 cups |
| Celery Salt |
1/2 t |
| Salt and Pepper |
to taste |

| Directions |
- Arrange potatoes and onion in alternate layers in an ungreased 9x13 casserole dish.
- Sprinkle the alternate layers with salt and pepper.
- Dice bacon and fry until crisp. Drain, keeping the bacon grease.
- To the bacon grease add sugar, cider vinegar, and 6 1/4 cups water.
- Add remaining water to flour and stir into a paste.
- Mix both mustards and blend in evaporated milk.
- Add the mustards and milk to the vinegar mixture.
- Cook over low heat, stirring constantly until smooth and thick.
- While still hot, pour dressing over potatoes until they are well coated.
- Sprinkle with bacon. Serve either hot or cold.
