Herbed Potato Salad

Portions: 64       Serving Size: 2.5 oz
Ingredient Amount
Northern Star or Farm Fresh Southern Style Diced Potatoes 10 lbs
Onion, finely chopped 1 1/2 cups
Eggs, hard boiled, chopped 8 each
Fresh Parsley, chopped 1/4 cup
Fresh Tarragon 1 T
Mayonnaise 2 cups
Lemon Juice 1/2 cup
Salt and Pepper to taste

Directions
  1. In a large pot add potatoes. Fill with water to cover potatoes. Cook on medium-high for 20-30 minutes or until potatoes are tender.
  2. Place potatoes, onion and eggs in large bowl. Add parsley and tarragon. Mix well.
  3. Next add mayonnaise and lemon juice and mix well.
  4. Season to taste with salt and pepper. Mix once more and serve.
