Herbed Potato Salad

| Northern Star or Farm Fresh Southern Style Diced Potatoes |

| Onion, finely chopped |
1 1/2 cups |
| Eggs, hard boiled, chopped |
8 each |
| Fresh Parsley, chopped |
1/4 cup |
| Fresh Tarragon |
1 T |
| Mayonnaise |
2 cups |
| Lemon Juice |
1/2 cup |
| Salt and Pepper |
to taste |

| Directions |
- In a large pot add potatoes. Fill with water to cover potatoes. Cook on medium-high for 20-30 minutes or until potatoes are tender.
- Place potatoes, onion and eggs in large bowl. Add parsley and tarragon. Mix well.
- Next add mayonnaise and lemon juice and mix well.
- Season to taste with salt and pepper. Mix once more and serve.
