Potato Chive Soufflé

Ingredient Amount
Northern Star or Farm Fresh Mashed Potatoes 6 lbs
Cream Cheese 16 oz
Sour Cream 16 oz
Butter, melted 1/2 cup
Egg 1 large
Salt 2 t
Black Pepper 1 t
Fresh Chives, chopped 1/2 cup

Directions
  1. Preheat oven to 350ºF. Add mashed potatoes and the rest of the ingredients in a large bowl, reserving some chives for garnish. Mix until all ingredients are thoroughly blended.
  2. Place mixture in a well-greased 2-quart baking dish and sprinkle with remaining chives.
  3. Bake in oven for an hour or until the top turns pale golden. Garnish with chives.
