Potatoes Pepperoni Dish

| Mozzarella Cheese, shredded |

| Tomato Sauce |
75 oz |
| Pepperoni, sliced |
40 oz |
| Tomatoes, large, diced |

| Directions |
- Divide melted butter or margarine among five 12-inch nonstick skillets.
- Place 2 lbs. potatoes evenly on the bottom of each pan.
- Sprinkle each with salt, pepper and one onion. Cover and cook over low heat for 20 minutes or until potatoes are tender.
- Layer each skillet with 1 cup of cheese, half of the tomato sauce, pepperoni and 2 diced tomatoes. Top with the rest of the tomato sauce and 1 cup cheese.
- Cover and cook on low until cheese is melted and tomatoes are heated thoroughly.

Add your favorite seasoning, green peppers, red peppers, black olives or Italian sausage.
