Potatoes Pepperoni Dish

Ingredient Amount
Quality Farms Red Skin Diced Potatoes 10 lbs
Butter or Margarine 1 cup
Onion, small, diced 5 each
Salt 1/2 t
Pepper 1/8 t
Mozzarella Cheese, shredded 10 cups
Tomato Sauce 75 oz
Pepperoni, sliced 40 oz
Tomatoes, large, diced 10 each

Directions
  1. Divide melted butter or margarine among five 12-inch nonstick skillets.
  2. Place 2 lbs. potatoes evenly on the bottom of each pan.
  3. Sprinkle each with salt, pepper and one onion. Cover and cook over low heat for 20 minutes or until potatoes are tender.
  4. Layer each skillet with 1 cup of cheese, half of the tomato sauce, pepperoni and 2 diced tomatoes. Top with the rest of the tomato sauce and 1 cup cheese.
  5. Cover and cook on low until cheese is melted and tomatoes are heated thoroughly.
Option:
Add your favorite seasoning, green peppers, red peppers, black olives or Italian sausage.
