Sicilian Potato Cakes

Ingredient Amount
Northern Star or Farm Fresh Hash Brown Potatoes 36 oz (2 1/4 lb)
Parmesan or Romano Cheese, shredded 6 oz
Pancetta Bacon, medium dice 6 oz
Onion, fine dice 2 oz
Red Bell Pepper, fine dice 2 oz
Basil, fine chop 2 T
Granulated Garlic 1/2 T
Salt and Pepper to taste
Melted Butter or Alternative 6 oz

Directions
  1. In a mixing bowl, combine all of the ingredients except the butter. Season to taste with salt and pepper.
  2. Pour half of the butter on a preheated grill and top with the potato mixture. Drizzle the remaining butter on top.
  3. Grill until golden brown.
