Mashed Potatoes with Spinach and Cheese

| Northern Star or Farm Fresh Mashed Potatoes |

| Fresh Baby Spinach |
20 oz |
| Butter |
1/2 cup |
| Gruyere Cheese, shredded |
4 cups |
| Salt and Pepper |

| Directions |
- Bring a large pot of salted water to a boil. Add baby spinach and cook for 1 minute. Drain well. Squeeze out as much water as possible from spinach. Set spinach aside.
- In large pot, fill half way with water and put mashed potatoes in water. Bring to a boil and heat potatoes for 15-20 minutes in boiling water.
- With tongs, pull out bag. Carefully empty bag of potatoes into a large bowl.
- Add the remaining ingredients to the potatoes. Mix until the butter and cheese has melted. Season to taste with salt and pepper. Serve hot.
