Vegetable Party Salad

Ingredient Amount
Northern Star or Farm Fresh Southern Style Diced Potatoes 10 lbs
Carrots, diced and cooked 5 cups
Green Beans, diced and cooked 3 lbs
Turnips, diced and cooked 2 lbs
Red Peppers, diced 2 each
Fresh Chives, chopped 1/2 cup
Mayonnaise 3 cups
Chili Sauce 1/2 cup
Celery Seeds 3 T
Salt and Pepper to taste
Lemon Juice to taste

Directions
  1. In a large pan, add potatoes and fill with water to cover potatoes. Cook on medium-high for 20-30 minutes or until potatoes are tender.
  2. In a large bowl, add potatoes, diced vegetables and chives. Toss well.
  3. In a small bowl, add mayonnaise and chili sauce. Mix well.
  4. Add celery seeds, lemon juice, salt and pepper to mayonnaise mixture. Mix well.
  5. Pour mayonnaise mixture over vegetables and stir together.
  6. Add salt and pepper as desired. Chill for 1-hour. Serve cold.
