Directions
- In a mixing bowl, combine the eggs, skim milk, fresh herbs and cream cheese.
- Pour half of the olive oil on a preheated grill and add the mushrooms and garlic. Cook until the mushrooms are golden brown. Add the artichokes, sun-dried tomatoes and green onions, and cook until heated thoroughly.
- Add the additional olive oil and the egg mixture to the grill and fold over itself until set. Season to taste with salt and pepper.
- Transfer to a serving tray or hotel pan and garnish with the crumbled goat cheese.
