According to Datassential’s Winter Trends Report, 57% of consumers are eager to purchase limited-edition specials during the winter months.

Italian-inspired flavors are trending beyond traditional pasta spots. Vodka sauce, pesto cream, and even affogato (espresso with ice cream!) are making menus more indulgent and fun. These flavors bring that “ahhh” feeling of familiarity while still feeling special and indulgent.

Holiday Highlights

Valentine’s Day is the ultimate restaurant holiday, with 58% of consumers celebrating at a restaurant or bar. Heart-shaped treats? Always a win. Picture cookie dough lollipops, festive cocktails, and shareable plates for two. And don’t forget the Super Bowl and Mardi Gras – perfect excuses for bold flavors and party platters that score big.

Savory Flavors Shine

Seafood takes center stage this time of year, especially leading up to Lent. Another breakout flavor? Lemon pepper – up 79% on menus over the past four years! It’s fresh, zesty, and showing up on everything from chicken to shrimp. Pair it with white truffle parmesan potatoes or bold sauces for dishes that feel comforting yet exciting.

Sweet Comforts

Chocolate fudge, red velvet, churro, pistachio, and cocoa are dominating dessert menus. Churro is up 28% on menus over the past four years, and pistachio is loved by 71% of consumers. Think churro-inspired brunch plates or pistachio desserts for that premium, Instagram worthy touch.

Innovation Inspiration

Restaurants are getting creative with mashups and bold builds. Last winter, Torchy’s Tacos launched the “Churroscoe” – a tortilla topped with fried egg, chicken tender, churro, and bacon bourbon marmalade. 52% of consumers found it unique, proving that playful, unexpected combos win big. Another trend? Burgers crowned with eggs. Make it a Pasteurized Shell Egg to keep it safe and appealing to all. These unexpected twists make menus exciting and give guests something to talk about (and post!).

Snow Better Time for Cozy, Creative LTOs

Winter is prime time for limited-time offers (LTOs). Last year, over 1,000 new and returning items launched during the season, with February leading the pack for menu innovation. Guests are craving cozy, nostalgic flavors with a twist. Hash browns and eggs are familiar favorites, but layer in trending flavors like lemon pepper, pistachio, sweet-savory combos — or even a Loaded Birria Hash Brown (hello brunch!) — and you’ve got buzzworthy dishes that ignite tastebuds.
