If global cuisine had a passport, it would be stamped "everywhere." From restaurant menus to grocery shelves, consumers are hungry for flavors that travel, no jet lag required. In fact, 61% of U.S. consumers want more global foods at restaurants, and nearly 9 in 10 operators already feature globally inspired items on their menus.¹ Translation? Global isn't niche anymore. It's mainstream, and it comes with a fork.

So, what's trending? The fastest-growing cuisines are African, Korean, Indian, and South American, all posting double-digit growth.¹ Mashups are climbing too: 48% of consumers are into fusion dishes² like Harissa Spiced Diced Potatoes with Butter Basted Salmon or the Mediterranean Power Bowl. Gen Z and Millennials especially read mashups as creative, not confusing.

Ingredients Going Global, Fast

It's not just full cuisines driving the momentum. Single ingredients are exploding. Chili crisp is up 749%, quesabirria a jaw-dropping 982%, with chamoy, ube, pad Thai, and Tajín close behind.² Once under the radar, they're now craveable, everywhere, and social-media ready. And they feel familiar: 71% of consumers say some global ingredients are already staples in their kitchens.¹ That growing comfort is exactly why global food feels less "foreign" and more like an everyday choice.

Authentic, Fusion, and Everything Between

Consumers don't want one-size-fits-all. 59% prefer authentic global dishes, while 67% see fusion as creative,¹ think the Smoky Chipotle Elote Pork Al Pastor Bowl or the Barbacoa and Chili Lime Diced Potato Bowl.

And big global flavor doesn't have to mean complex, especially when staples like eggs and potatoes are already on hand, ready to travel the globe in any dish. From African to Korean, they're a craveable base with zero extra lift, giving operators permission to experiment, as long as the flavors are bold, respectful, and delicious.

Global food isn't replacing comfort. It is comfort now. Consumers are eager for authentic flavors, curious about under-the-radar cuisines, and already living with global ingredients every day. The opportunity is clear: go global, go deeper, and have a little fun along the way.

The world's flavors aren't just trending. They've officially moved in.
