Directions

  1. Mix shredded hash browns together with starch.
  2. Divide hash browns into 12 portions (½ cup each).
  3. Use a round cookie cutter to shape into discs.
  4. Cook in medium heat, well buttered skillet until golden and crispy (about 5 minutes per side).
  5. Cook eggs in a skillet over medium heat until fluffy and set.
  6. Assemble the Hashstacks: On each plate, layer: 1 hash brown disc, scrambled eggs, shredded cheese. Repeat building hashstacks 2 more times.
  7. Spoon sausage gravy over the top.
  8. Garnish with chives.

Sausage Gravy

Ingredients

Spicy breakfast sausage
8 oz
Butter
1 Tbsp.
All-purpose flour
4 Tbsp.
Dry mustard
¼ tsp.
Pinch of nutmeg
Kosher salt
¼ tsp.
White pepper
¼ tsp.
Whole milk
2 cups

Directions

  1. Melt butter in a saucepan over medium-high heat.
  2. Add sausage and cook until browned and crumbled.
  3. Stir in flour, mustard, nutmeg, salt, and pepper. Cook for 2 minutes.
  4. Gradually whisk in milk, one-third at a time, until smooth and thickened. Keep warm on low heat.
