Buffalo Chicken Hash Brown Waffle

Servings:  Serves 2 large waffles

Ingredients

Milk
1/4 cup
Sharp cheddar cheese, finely shredded
1 cup
Fresh chopped chives with additional for garnishing
1/4 cup
Salt
1/2 Tbsp.
Pepper
1/4 Tbsp.
Deep fried chicken, breast or strips
1
Buffalo sauce, either tossed or drizzled over chicken
2 Tbsp.
Blue cheese crumbles
2 Tbsp.

Directions

  1. Heat waffle iron on the medium-high setting.
  2. In a medium-sized mixing bowl, whisk together eggs and milk.
  3. Stir in potatoes, cheese, chives and season with salt and pepper.
  4. Brush each side of waffle iron with melted butter.
  5. Depending on the size of your waffle iron, scoop a layer of the potato mixture onto the surface. Spread to about 1/2 inch from the edges and close the waffle iron. Cook for about 5 minutes, checking every few minutes to avoid burning.
  6. When the entire waffle is golden brown in color, carefully remove from the waffle iron with a fork or tongs.
  7. Finish the dish by topping the waffle with deep fried chicken, a sprinkle of blue cheese crumbles and chives.
