- In a large skillet, cook ground beef and chopped onion over medium heat until well browned, breaking it into smaller piece crumbles.
- Drain fat if in excess of 2 tablespoons.
- Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes.
- Combine the cornstarch, and beef stock with whisk until dissolved; stir into beef mixture.
- Bring to a boil over medium heat; cook and stir until thickened, 2 minutes.
- Turn off heat.
- Stir in sour cream.
- Adjust seasoning with salt and pepper.
- Pour beef mixture into baking dish.
- In a separate bowl, combine hash browns, mayonnaise and shredded cheese.
- Sprinkle hash brown mixture over the top of the beef mixture.
- Bake at 375° for approximately 40-50 minutes or until potatoes are golden brown and crisp.
- Remove from oven and garnish with chopped parsley.
