Shepard’s Pie

Shepard’s Pie

Dietary Needs:

Servings:  6

Ingredients

Ground beef, 85/15 for best flavor
1 lb.
Onion, chopped fine
1 medium
Corn kernels
2 cups
Peas
2 cups
Ketchup
2 Tbsp.
Worcestershire sauce
2 Tbsp.
Garlic, minced
2 cloves
Cornstarch
3 Tbsp.
Beef stock, cold or room temp
1 1/2 cup
Sour cream
1/2 cup
Mayonnaise
1/2 cup
Sharp cheddar cheese, shredded
3/4 cup
Salt and pepper, to taste
Parsley to garnish

Directions

  1. In a large skillet, cook ground beef and chopped onion over medium heat until well browned, breaking it into smaller piece crumbles.
  2. Drain fat if in excess of 2 tablespoons.
  3. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes.
  4. Combine the cornstarch, and beef stock with whisk until dissolved; stir into beef mixture.
  5. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes.
  6. Turn off heat.
  7. Stir in sour cream.
  8. Adjust seasoning with salt and pepper.
  9. Pour beef mixture into baking dish.
  10. In a separate bowl, combine hash browns, mayonnaise and shredded cheese.
  11. Sprinkle hash brown mixture over the top of the beef mixture.
  12. Bake at 375° for approximately 40-50 minutes or until potatoes are golden brown and crisp.
  13. Remove from oven and garnish with chopped parsley.
