Croissant Chorizo Smash Burger

Ingredients

Chorizo, ground
1 each
Pepperjack cheese, sliced
1 each
Guacamole, prepared
1 Tbsp.
Arugula, baby
¼ cup
Pico de gallo, prepared
1 Tbsp.
Chipotle mayo, prepared
1 Tbsp.

Directions

  1. Pre-heat flat-top griddle to 350°.
  2. Brush both top and bottom of croissant bun with melted butter and toast on griddle. Set aside until assembly.
  3. Scoop ground chorizo using a #12 scoop (approx. 3 ¼ oz.) onto a parchment lined baking sheet. Hold under refrigeration.
  4. Place 1 chorizo scoop onto a preheated greased griddle and smash with a spatula until flat and cook approx. 3-4 minutes per side. Place a slice of pepperjack onto burger and allow to melt.
  5. Place burger onto bottom half of croissant.
  6. Add heated fried egg to burger. Spread ½ oz of guacamole onto top half of bun. Top burger with ¼ cup of arugula, ½ oz of pico and ½ oz of chipotle mayo.
  7. Top with bun and serve immediately.

Tips

  • Parchment paper can be placed on top of chorizo to flatten easier.
  • Serve burger with house fried potato chips using Simply Potatoes® Refrigerated American Home Fries Sliced Potatoes made with peeled Russet potatoes sliced 1/8” thick, 2/10 Lb Bags – 20169-15120-00.
